The Body Coach’s Cashew Energy Balls | Recipes

I recently had a bit of a baking frenzy and made a couple of different things (banana bread, these energy balls, and a chocolate popcorn recipe that should be up next week). Two of these are recipes from The Body Coach, specifically his fat loss cookbook. I’ve always want to try energy balls as they look so easy to make, and I’m glad I chose The Body Coach’s cashew energy balls!

They have dates and coconut in them, both of which I love! They’re very quick to make and all you need is a food blender, or I used a nutri-bullet and it worked really well.

The Body Coach's cashew energy balls

Ingredients:

2 tbsp coconut oil
1 tbsp maple syrup
2 tbsp cashew butter
1/4 tsp ground cinnamon
100g cashew nuts
50g desiccated coconut
100g dates, de-stoned & chopped

Method:

Melt the coconut oil. Once melted, stir in the maple syrup, cashew butter and cinnamon until combined.

Put the cashews in a food processor (or a nutri bullet in my case) until finely chopped. Transfer to a bowl and add half the desiccated coconut.

Add the dates and cashew butter mixture to the food processor next, and mix until you get a paste.

Add and mix this into the cashew nut mixture. Now your mixture is ready!

Pour the other half of the desiccated coconut onto a plate, and roll your mixture into balls and roll them in the coconut. This recipe should make 16 balls, but mine made 12 as I must have rolled them a little bit bigger.

Chill in the fridge for around 1 hour, and then they’re ready to eat!

I love the taste of these, and they’re not dry either, which I thought they would be. Let me know if you try out this recipe, I’d love to see your creations!

They’re honestly gorgeous, so much better than I thought they were gonna taste (and I thought they were gonna taste good, anyway!) x

I wasn’t so sure about the cashew nuts either, but you don’t taste them at all. It’s more the dates and coconut that you can taste – they’re really good! x

Great recipe! It’s not something I would usually go for personally, I don’t really like coconuts or nuts haha. I’m sure my mum would love these though – will have to show her this!

These literally sound like my mums dream food so I’ll definitely be sending this link to her! I love cashews and anything with cinnamon in and I’m so jealous about the banana bread too, I’m a huge sucker for it! These look like such a nice and more healthy snack!

I hope she enjoys them – they were much better than I thought they were gonna be, and the banana bread recipe is delicious as well 😍 100% recommend both of them! They are, and plus that extra boost of energy is great for a mid-afternoon snack!

They’re so tasty, and there isn’t much of a strong cashew taste either, you can mainly taste the sweetness of the dates and the coconut on top!
